My Favorite Baby Carriers

Lillebaby Complete, Side Carry

Caleb just turned 2 years old last month and has recently grown out of the baby wearing stage. I miss wearing my baby already! So while reminiscing on those cuddly times, I thought I would share my favorite baby carriers with you.

As a first time mom, I wanted to be prepared, especially in the baby wearing department. So while I was pregnant, I talked to some mom friends & did some research. Then I went to Zoolikins and tried on the ones that interested me. The lady was so helpful and answered all my questions. I decided on the Beco Ring Sling and the Lillebaby Complete.

Turns out I could not use the Beco Ring Sling at all because at the time I had severe carpal tunnel and the material was too thick and new to slide through the ring easily, despite being washed several times. A friend is breaking it in for me now so maybe I'll try it again with the next baby!

So I purchased the Baby K'tan Cotton Wrap Style Baby Carrier and LOVED it from the get go. This soft carrier is really easy to use! No long material to get lost in and no actual wrapping. Just slip it on, put your baby in and off you go! Baby is comfy and kissable. You could have baby facing you, facing outward or to the side. You can nurse in the K'tan as well.

Once Caleb had gained some weight I used the Lillebaby Complete. This is an awesome carrier for bigger and older babies. You can use in 6 different positions and it has lumbar support. My favorite positions were front, side & back carry. You can nurse in this one as well simply by adjusting the straps to lower the baby in the front position. Very convenient when your babe is hungry and you're out & about! This carrier is very durable and easy to use. Once the carrier is set to your carry style, & baby is in, it just has two buckles to secure.

Buttery Sandwich Bread Recipe

A friend recently shared this recipe with me and it is one of the best dinner roll recipes I have ever tried. She made these rolls fresh one day when I visited and I just had to have the recipe! These rolls turn out so good, every time. So I thought it would make a fantastic loaf of bread too! If you want dinner rolls, just follow the recipe online as written by Inquiring Chef.

Buttery Sandwich Bread
Adapted from Inquiring Chef
Makes 1 loaf of sandwich bread

1 1/2 cups warm water 100-110°
1 Tbl yeast
2 Tbl sugar
2 Tbl unsalted butter, softened
1 tsp sea salt
4 cups (500 g) Einkorn All Purpose Flour
3 Tbl unsalted butter, melted
1 tsp sea salt

1) In KitchenAid Mixer w/dough hook, stir warm water, yeast and sugar. Let sit 5 minutes.
2) Add butter, salt & 2 cups of the flour, mixing on low. Mix until incorporated. Mix in remaining flour on medium until smooth & bowl is clean, about 5 minutes. Cover with kitchen towel and let rise for 1 hour, or until doubled.
3) Grease loaf pan & turn the very sticky dough into the loaf pan using a wooden spatula. Then shake the pan to center and spread the dough with wet fingers and very gently smooth the dough on the top of the loaf to make even.
4) Preheat oven to 375° & let rise another 30 minutes. Brush w/butter and sprinkle w/salt.
5) Bake for 40 minutes. Brush with remaining butter. Let cool in pan 5 minutes, then onto cooling rack to finish cooling. Slice & enjoy!

My Trim Healthy Mama Review & Pre-Pregnancy Weight Goal Met!

Today I am so excited that I FINALLY got to my pre-pregnancy weight! It was slow coming off because I wasn't too hard on myself about it, especially while breastfeeding. I didn't really get as serious about it until the New Year. 

To give you a little background, my pregnancy weight gain was a little excessive. I gained 30 pounds! In the beginning I was still eating healthy, just as I usually do. I really didn't have cravings except once for biscuits and gravy. I quit drinking coffee while pregnant. It wasn't too hard to break that habit since I didn't really like the taste anymore. Which was so strange- I'm a HUGE coffee lover! Unfortunately, I wanted hot chocolate instead, which was way higher in sugar & calories than my normal coffee so that didn't help. And all of a sudden towards the end I wanted cake pops with my hot cocoa. Not a good situation! I just knew I was having a little Jimmy because my husband loves hot chocolate and hates coffee. I was right about having a little Jimmy! Caleb is just like his Daddy.

Here's what I did:

*Trim Healthy Mama- About a year ago I decided I would try Trim Healthy Mama. I love trying new recipes so I bought the cookbook. And instead of "being on a diet" I tried to look at it more like just trying a bunch of new recipes. Which was awesome! You don't feel deprived at all. Until Caleb was 20 months old I was breastfeeding so I wasn't super strict about it and I still lost weight. 
*Cut out sweetened drinks. My morning coffee with cream only and any cups thereafter black. Except a couple cheat days & a celebratory coffee with cream & honey today!
*Drink more water
*Cut out modern wheat. See my post Wheat Belly to find out more. I still eat Einkorn, the original wheat.
*Exercising a few times a week. Just beginner things like postpartum core exercises & aerobics. 
*Liquid fast 1 time per week. This I only did at the very end and for only 2 weeks. The 3rd week was only a half day fast. Those last stubborn couple of pounds were driving me crazy & fasting is very beneficial for the body. For me it was easiest to fast on Sunday when I'm not preparing food all day. I'm more involved with church, soul winning and fellowship. And I say liquid because I did allow coffee and tea for low points and was sure to drink at least 3 quarts of water, if not more. 

Now that I'm at my pre-pregnancy weight, I'm going to continue to lose a few more pounds. Reason being I would like to get rid of more visceral fat and be at a healthier BMI to reduce my risk of diabetes and other major health issues. My family needs me and I want to be as healthy as possible!

I highly recommend the Trim Healthy Mama Cookbook. So many delicious breakfast, lunch, dinner and even dessert recipes! However, I do not recommend the use of Stevia as it has been linked to miscarriage. You can still lose weight using their plan and cookbook but with natural sweeteners like maple syrup, honey in moderation and coconut sugar (lower glycemic than the others). THM Chocolate Cake Recipe

This recipe is my version of the Trim Healthy Mama Trimastic Chocolate Zucchini Cake. Although I did use a vegetable in the cucurbits/squash family, it was not a zucchini so we can’t really call my version a zucchini cake after all. My substitution is in a whole foods style (no stevia), NSI (no special ingredients), doubled recipe and not technically "on plan". But let me assure you I am just 2 pounds from my pre-pregnancy weight since starting THM recipes last year, even with pulling stunts like this from time to time. I’m sure I could have made it sooner with a little more effort as the THM Plan is a great & effective way to lose weight without feeling deprived. However, I was still breastfeeding up until 4 months ago so a healthy milk supply was more important to me. Plus my appetite was ridiculous while breastfeeding & I didn’t want to get discouraged by not losing weight fast enough. About 4 months ago I got more serious, well sort of! Haha! Sometimes you just NEED chocolate cake! 

Let me tell you how this recipe happened. Have you ever planned out your meals for the week, went grocery shopping and the store didn't have your ingredients so you had to improvise? Then you get home to start your recipe and notice the pan size will not be enough so then you have to double your recipe? And finally, you don’t have the "special" ingredients? I'm sure it's happened to just about anyone who cooks if you're honest. Well, this is THAT kind of recipe. Though I was pleasantly surprised that it turned out great and thought I would share it with you! And yes, we ate it for lunch/dinner & Caleb's Birthday and I didn't feel even a tad bit guilty.

This just happened to be the same day Pastor Anderson had mentioned in his morning sermon that he had cake for dinner the night before because he had gotten home so late and missed the dinner Mrs. Anderson had prepared. I laughed so hard in the sermon not only because his personal situation was funny but that we were also eating cake for meals. Ha! It was a great sermon on Doing the Hard Thing. Check it out.

Chocolate Squash Cake
Adapted from Trim Healthy Mama 
Makes 1 13 X 9 Cake


Coconut oil cooking spray
1 small butternut squash; peeled, seeded & cubed
8 large eggs
8 tablespoons butter
1 1/2 cups equal parts coconut flour and almond flour or THM Baking Blend
1 cup coconut sugar
3 teaspoons vanilla extract
2 teaspoons aluminum free baking powder
2 teaspoons baking soda
2 dashes salt
8 tablespoons unsweetened cocoa powder
1/2 cup 60% Cacao bittersweet chips

Chocolate Cream Frosting:
1 cup heavy cream
4 tablespoons unsweetened cocoa powder
1/4 coconut sugar
Dash of vanilla extract

1) Preheat oven to 350° F. Coat 13 X 9 baking pan with coconut spray.
2) For the cake: Process all cake ingredients in food processor. You may have to process several times while filling to fit all in the processor but it will work, though it will be a tight squeeze if you have a regular size processor like me.
3) Pour the batter into the pan and bake 35-40 minutes. Toothpick should come out clean.
4) Make frosting while cake is cooling. Blend all frosting ingredients in a blender until thickened. Spread onto the cooled cake. Enjoy for dessert or any meal if you so choose. Leave the guilt behind, it has squash and is lower glycemic than regular sugar with the use of coconut sugar instead.   

When I made this cake it turned out delicious! Moist, light and chocolatey-just like a normal chocolate cake, and not even a hint of squash. If you don't tell them, they won't know it's in there! Plus there is not a lot of sweetener in this recipe for a whole cake so you may want to add more to taste. However, you can see below for proof it's kid approved as is.
